Shan masala recipe mixes
For many Pakistani households, Shan is the quiet hero behind weeknight dinners: a reliable base that makes biryani, karahi or nihari doable even after a long day. Tukwila carries a broad Shan range, from Bombay, Sindhi, Chicken, Mutton, Fish and Pilau Biryani to Karahi Gosht, Chicken Handi, Korma, Keema, Nihari and Paya, and on to Tikka, Tandoori, Butter Chicken, Seekh, Shami, Bihari and Chapli Kabab.
Each packet is built around one specific dish, contains salt and has the full recipe printed on the back. Beyond the meat dishes you'll find Shan Dal Masala, Chana Masala, Vegetables Masala, Chaat Masala and Fruit Chaat Masala, plus Shahi Haleem Mix for Ramadan.

Adjusting Shan mixes to your taste
- Less heat: Shan is seasoned for Pakistani palates. Start with half to two thirds of the packet and balance with a little yoghurt, cream or tomato.
- Salt: the mixes are already salted, so only season right at the end.
- Fresh additions: ginger, garlic, green chillies and coriander turn the base into something that tastes home-made. A jar of ginger-garlic paste saves time.
- Don't rush the bhuna: fry onions, masala and meat until the oil separates at the edges. It takes 10–15 minutes and makes all the difference.
Haleem has a page of its own, with every variety: see haleem mix.
Frequently asked questions
Are Shan spice mixes very hot?
Many are robustly spiced, especially Sindhi Biryani, Karahi and Nihari. If you prefer it milder, simply use less powder than the recipe says. Korma, Butter Chicken and Pilau Biryani are gentler to begin with.
How many people does one Shan packet serve?
Most packets are designed for about 1 kg of meat, which makes 4 to 6 portions depending on the sides. The exact quantities and other ingredients are listed in the recipe on the back.
Can I use Shan masala for vegetables?
Yes. Shan Vegetables Masala, Dal Masala and Chana Masala are made for vegetarian dishes. Karahi or Korma mixes also work with paneer, chickpeas or cauliflower if you reduce the amount.
How should I store opened Shan packets?
Fold the packet tightly, clip it shut and keep it in a screw-top jar. That way the aroma lasts for several weeks and the powder won't absorb moisture or kitchen smells.
