Creamed coconut, milk and cream: matching the format to the recipe

Do not confuse coconut names

Creamed coconut can be milled coconut formed into a block. Coconut milk and coconut cream are different formats; coconut water is another product again. Similar front-of-pack words do not make them equal-volume substitutes.

A manufacturer may give directions for turning its creamed coconut into milk. Follow that product's quantities instead of replacing a can of milk with the same weight of block. A recipe needing a pourable liquid can otherwise become much thicker than intended.

For a curry, check whether the recipe expects milk, cream or a piece of block. For a dessert, check whether it needs an unsweetened product or a specifically sweetened preparation. A cocktail-style coconut cream product is not automatically the cooking ingredient named by your recipe.

Compare coconut content, ingredients, net quantity and storage directions. Do not infer an allergen-free claim because the main ingredient is coconut: the actual product can have relevant cross-contact warnings. Manufacturer pages themselves advise checking the pack received when recipes change.

Plan the remainder before opening

• If you need only part of a can, check its after-opening instructions before choosing the size.
• For a block, follow the manufacturer's method for portioning or dissolving it.
• Label any stored remainder with the opening date and keep it as the pack directs.
• Do not assign every brand the same refrigerated shelf life.
