Buying tamarind: block or paste?

5 min read · Updated 2026-10-28

Imli, tetul and tamarind appear on different packs. The useful shopping decision is whether you need a block or a prepared paste, and how concentrated the particular product is.

Compare the format first

A tamarind block is compressed fruit material. Depending on the product, it may contain fibres or seeds. Paste has already been processed, but consistency and concentration still vary. Words such as “concentrate” matter: equal spoonfuls from different packs do not necessarily give the same sourness.

When does a block make sense?

A tamarind block suits cooks who want to prepare and strain their own liquid tamarind base. Allow an extra preparation step and have a sieve ready. Loosen the amount needed in water according to the pack and recipe, work through the softened fruit and remove hard pieces. The water quantity depends on the consistency you need for the final sauce.

When is paste convenient?

A prepared tamarind paste saves preparation. Compare ingredients, dilution instructions and storage after opening. If your recipe was written for a block, do not transfer that quantity directly to a concentrate. Start with less and adjust the sourness gradually in the finished dish.

Three questions before buying

  • What are you making? A thin chaat sauce needs a different consistency from a small sour addition to dal.
  • How often will you use it? A smaller pack can be more practical for occasional cooking.
  • What is in the product? Read the ingredient list and do not automatically treat a sweetened sauce as plain tamarind paste.

Adjust the flavour deliberately

Add tamarind in small steps, stir and taste before adding more. Water changes both sourness and consistency. More sugar makes a sauce sweeter but does not simply remove the acid already added. When trying a new product, note the amount and dish; that record is more useful for your next shop than a fixed conversion between brands.

Frequently asked questions

Can I replace tamarind paste with a block one for one?

Not as a general rule. Processing, concentration and water content differ. Follow the pack instructions and adjust gradually for your recipe.
