Mango pulp and mango juice

When fresh mangoes are out of season, a tin of mango pulp comes to the rescue. It's thick, sweetened purée, usually made from Indian Alphonso mangoes, in an 850 g tin; depending on the delivery the brand may be Taj, Banno, ML or Alibaba, but the contents are always deep yellow, fragrant and ready to use. Think mango lassi, kulfi, mango shrikhand, cheesecake or aamras served with hot puris.

For drinking straight from the fridge there's Rubicon Mango Juice, the Pakistani favourite Shezan Mango, and Dimes mango juice. Darina Mango Powder is an instant drink mix you simply stir into cold water, handy for a crowd at Iftar or a family celebration.

The fruit itself – chaunsa, langra, fazli and friends – appears in season on our fresh mango page. More bottles and cartons sit under juices, and if you're planning a pudding for Eid, have a look at our kheer and dessert mixes.

Ways to use mango pulp

  • Mango lassi for four: blitz 250 g mango pulp, 400 g plain yoghurt, 200 ml cold milk, a pinch of ground cardamom and a few ice cubes. You rarely need sugar, as the pulp is already sweetened.
  • Easy kulfi: stir 300 g pulp into 200 ml condensed milk and 200 ml double cream, pour into moulds and freeze for at least six hours.
  • Mango phirni: let a classic phirni cool, then spoon a layer of pulp on top.

Once a tin is open, decant the rest into a clean lidded jar, keep it in the fridge and use it within a few days; larger leftovers freeze well in portions. Fresh mithai and a cup of chai afterwards complete the spread.

Frequently asked questions

Is mango pulp sweetened?

Yes, most Indian mango pulps contain added sugar, which helps them keep and means they're ready for lassi or desserts straight away. The ingredients list on the tin tells you exactly what's inside.

Which mango variety is in mango pulp?

Usually Alphonso, known as hapus in Marathi, an intensely fragrant variety from western India. Some tins use Kesar mango, which is a little milder and more floral. The label states the variety.

How long does opened mango pulp keep?

Transferred to a clean jar and kept chilled, it lasts a few days. Don't leave it in the open tin. Leftovers freeze nicely in ice-cube trays and can go straight into the blender later.

What's the difference between mango pulp and mango juice?

Pulp is a thick fruit purée for cooking and blending, while juices and nectars such as Rubicon or Shezan are diluted and ready to drink. Use pulp for lassi and juice for a quick cold drink at Iftar.
