Fine or coarse semolina: reading a rava pack

Read beyond the familiar name

Rava and sooji are names often used for wheat semolina. Rice rava is a different product. Before putting a bag in your basket, read the grain in the ingredients and the grind on the front. Similar-looking pale granules do not establish that two packs will cook alike.

For an upma recipe, follow its choice of semolina and its roasting step. For a dessert, check whether the method expects fine or coarse grains. If the packet is already roasted, do not automatically repeat the preparation intended for a raw product.

Make the shopping decision in this order

• Grain: wheat semolina or the rice product named by the recipe.
• Grind: fine or coarse, where the manufacturer states it.
• Preparation: plain, roasted, or a complete seasoned mix.
• Quantity: enough for your planned batch, with a realistic use for the remainder.

A ready mix can include seasonings or other ingredients. Compare its ingredient list and recipe panel rather than treating its total pack weight as pure semolina. Conversely, plain semolina does not include everything needed for the finished dish.

Avoid the common substitution mistake

If only a different grind is available, look for a recipe designed for that grind instead of promising the same result with the same water and time. For a first attempt, make a smaller batch and note the texture. Thickening can continue as a dish stands, so assess it at the serving stage specified by the recipe.
