Karahi at the weekend, daal chawal midweek and a couple of zeera biscuits with tea: Pakistani home cooking leans on a handful of trusted brands, and those are what we keep on the shelf. Top of the list are the recipe mixes from Shan, covering karahi gosht, nihari, Sindhi biryani, chapli kabab and shahi haleem.

For the teapot there's Tapal Danedar, the strong black tea behind doodh patti and karak chai, with more blends on our chai and tea page. Add Laziza Kheer Mix, Rooh Afza, National ginger paste, Ahmed mint sauce and chilli sauces, and LU Desi Bakeri biscuits such as Zeera and Prince. For rice, plenty of customers choose golden sella basmati from Heer or Punjab King, as it stays firm through the layering of a biryani.

All that's missing is the meat: halal goat and lamb is cut to order for you. In summer, Chaunsa and Sindhi mangoes join the range while they're in season.

A Pakistani pantry in a nutshell

  • Masala packets: Shan mixes already contain salt. Start with half a packet per kilo of meat and add more if you want it hotter.
  • Rice: sella basmati for biryani and pulao, regular basmati for plain rice.
  • Flour: roti and paratha need fine wholemeal chapati flour; see our atta page.
  • Pastes: jarred ginger and garlic paste saves a lot of chopping when making karahi.
  • Something sweet: Laziza kheer is ready in about 20 minutes and handy when guests turn up.

During Ramadan, have a look at our haleem mixes, which slow-cook with beef or goat into a rich, thick stew. Everything can be ordered online or picked up at the Dresden shop.

Frequently asked questions

Which Pakistani brands do you stock?

Among others: Shan masala, Tapal tea, Laziza dessert mixes, National pastes, Ahmed sauces, LU Desi Bakeri biscuits and Rooh Afza, plus sella basmati from Heer, Punjab King and Ganga.

Which tea works for doodh patti?

Granular CTC black tea such as Tapal Danedar is ideal, because it gives plenty of colour and strength when brewed straight in milk. Bring tea, milk and sugar to the boil together and let it simmer for a few minutes.

Do you sell Chaunsa mangoes?

Pakistani Chaunsa and Sindhi mangoes are available only during the summer mango season, and only while stocks last. During those weeks, keep an eye on our fruit and vegetables section.

How spicy are Shan masala mixes?

Many Shan mixes are fairly punchy. For a milder dish, use less powder than the packet suggests, add a little yoghurt or tomato, and check the salt only at the end, as the mix is already salted.
